Can I view past mobile data usage after removing the SIM?

I was using my Android Moto G5+ with a small mobile virtual network operator. But recently, their required VoIP app suddenly used an unreasonable amount of mobile data, and they charged me for it. The "Data usage" page of the Android OS settings showed the sudden spike in the graph, and showed that the provider's app had used a huge amount of the data.

So I removed the SIM chip from the phone to make sure no more data would be used. (I know I can also just disable data in the settings, but I wanted to be extra sure.)

Now I'm trying to collect various pieces of evidence, in case I need it in the process of trying to get some money back from the provider. But the "Data usage" page is now blank, showing 0 B used over a period that would have included the incident.

Is older data about mobile data use possibly still saved somewhere else on my phone (or in my Google account)? How might I find it? Or am I just out of luck?
