I have purchased a cheap smart watch to see if I would actually like one. At the moment, this one recommends Yoho as the app. I was sort of hoping to join the watch up with a Google app or similar.

But how do you do that?

I downloaded Wear OS to try, but it doesn't pick up the watch. So I figured there must be a way to get the watch to connect to other apps.

    Any suggestions?

Are you sure your watch is an Android Wear one? If so, apps that support watches should appear in your Play Store. For Android Wear 1 watches you need to install the app on your phone and that will 'link' to your watch. For Android Wear 2 watches, the apps are now installed directly to the watch.

The default fitness app for AW is Google Fit, but there are a lot of other apps available.
