I am having a lot of audio issues, and i suspect it is my ear that activates the notification panel which then distrups my calls. Is there a way to combat this issue?

When you put your ear up to the phone, the proximity detector should detect it, and shut the display off. If it's not doing that, you have to have the proximity detector replaced. (Unless you're using a case that's interfering with it.)

But try, when you're in a phone call, turning the audio up all the way (with the Volume Up button). When you're not in a call, and not listening to anything else, it sets the ringer volume, not the in-call volume.

Welcome to Android Central! Can you give more details about your call audio being lost? Do you mean that you suddenly can't hear the other person, or the other person can no longer hear you?
