What I've done is factory reset the phone from the menu options, reboot (shouldn't require a sign-in since you were signed in when it was reset), then factory reset it again using the button method. This ensures that it will act as a new device when they set it up and it prevents the phone from attempting to restore apps that were installed. This was on HTC phones so your results may vary.
