Make phone calls using handsfree when phone is locked in my pocket

I move from Windows phone to Android almost two years ago, so far I'm happy with the change and no problem at all with any app or feature, but there is something I will like to configure in my S8. In WP I was able to make a phone call when my device was inside my pocket, locked and using a wired or bluetooth handsfree. I didn't need to touch the phone, only do a long press to the handsfree button and then tell "call wife" and it made the call.
How can I configure something similar in Android? Where I live, is very usual to get your cell robbed if you are in public areas with it in your hands.

Set up Google Assistant to respond to "Google" from any screen. Then say "Google ... call Mary". Work out how long you have to pause between "Google" and "call".
