Official software updates will not do that to iPhones or any other phones, except perhaps in very unusual circumstances.

It’s always wise to keep your personal data backed up as a safeguard, since, although it’s highly unlikely that anything will go wrong, it causes so much inconvenience if it does. It’s far far more likely that personal data loss will occur through user error - accidental damage to the phone, say - so having backups is desirable for those other reasons too.
