Which system apps are needed and which can be removed/disabled? and it not affect being able to use.

Which phone?
The ones that say u can disable will be ok , the others that you can't is because Android finds it important and won't allow you.

Welcome to Android Central! If you want to use any smartphone, you're going to have to accept the fact that system apps need various permissions for the phone to work correctly. If that's too worrisome for you, you may want to consider going back to a flipphone.
