what happens if my software update keeps getting irrupted because of poor data

It depends n the phone. If it does seamless updates, the worst that can happen is that you don't get updated. If not, and the update starts installing, then gets interrupted ... I lost a Note 3 that way. Stopping at just the wrong time can hard-brick a phone. But without knowing which phone it is, no one can tell you which could happen.
