The text message notification is so loud while I'm wearing headphones. The volume slider for Notifications is the farthest to the left (without being off) and it's still so loud that it hurts my ears.
I've also changed the notification sound to multiple sounds and even 3rd party (Zedge) - and it's still playing the old sound. Why won't it update the notification sound? Can I adjust the notification sound in headphones?

No, but you can edit the sound file (Ringtone Maker will edit any sound file) to make it softer. As to why it won't update the sound, is the new file in the Notifications folder? If not, it won't be seen. If it is, you have to restart the phone for Media Scan to pick it up.
