I read the thread for problem solving and am now planning to try to uninstall the app update, but when I get to the step for uninstalling, it only asks if I want to reset to factory settings. Is there any other options that I'm missing because I don't y to lose my contacts?

Welcome to Android Central! If you uninstall updates to a preinstalled app like the Phone app, it will tell you that you're reverting to the factory version of the app. That's what you're trying to do, so go ahead. That won't affect your contacts. Since you have a Nexus 5X, I assume your contacts are saved to your Google account anyway, which means they should be safely synced to your Google Contacts in the cloud. Go to contacts.google.com on your computer browser, and if you see all of your contacts there, they're safe.
