I run 1 app and when i try to close app running in the background i see 2 apps running instead of 1.1 is the app i opened and another one is some other random app in my system.

Welcome to Android Central! This isn't Windows. In Android, the system will open certain apps and cache them in RAM to make app opening and switching quicker and more efficient. In Android, empty RAM is wasted RAM.
And if the app you open needs a process that's located in another app, it opens that other app. (For instance, the Walmart app, if you use Walmart pay, needs the fingerprint process.)
