I just picked up a NookColor and it's running the stock v1.0.0 Nook software. BN released 1.0.1 in early December, but it doesn't roll out to everybody's NC right away (and unlike other Android devices, there's not a "check for updates" button in the Settings menu).
If you root while running 1.0.0, you'll need to un-root back to stock before you can update to 1.0.1.
** I repeat: you cannot install the 1.0.1 update on a rooted 1.0.0 NC. **
Before you root, be sure to apply the latest update, available here at BN's site:

Over on NookDev, there is two automated root methods, one for NCs running 1.0.0, and the other for 1.0.1. Save yourself the trouble of starting over and update your software first!
