So I've come from sprint where I always had to call in or update my phones online to switch them. I'm heading out to Vegas soon and always head to the pool parties, looking to have my S4 far away from that water but thinking about picking up an older Motorola defy (water resistant/proof) on amazon to bring to the pool. With T-Mobile I can just swap the sim (with the required adaptor if needed) and be good to go correct?

Yes, you simply swap SIMs. The only caveat is that you may have to set APN settings manually. I don't know about your specific devices. But in most cases it's not necessary anyways.
