For copying and pasting... long press (3 seconds) on the emails screen. A set of handles should appear. Drag them over the text.. select copy. Then long press again to bring up the paste option. Works for wherever you can enter text. For example.. you can copy text from the browser and paste it in an email.
For saving emails..
Gmail: put a check mark next to the email(s) ... select labels (the icon looks like two tickets/labels) choose which folders you want... then select Done.
EMail: same steps except select the folder icon.
