My default notification sound is set for my text messages but only works with emails. The default notification sound for my text messages is something completely different.

The default notification sound is used for an app that has no notification set (if you look to set it, you'll see it's set to Default). If you change the notification sound in your text app, you'll get that sound when you get a text, not the default sound. That's probably how your phone is set up. (I'm old fashioned - email says "you have mail" (the old AOL notification) and a text says "you have a text".)
