I want to be able to delete emails from my gmail app on my phone BUT continue to have them on the server so they are available to me later in my Desktop mail manager - Thunderbird.....

The GMail app is more of a 'window' to your GMail account. Whatever you delete in one end, gets synced and deleted in the other. Your phone actually doesn't store the messages for over the set sync period (usually 2 weeks). You can disable sync for your GMail account, meaning that you'd have to manually refresh your GMail app to get new messages, BUT that also means that once you manually sync, any messages you deleted there will be deleted from the server as well.

So what you are saying is it cannot be done unlike other email applications which allow it. Hmmm, I guess I will have to go back to K9 or Maildroid then. Thanks!

Correct. If you want to use your e-mail like that, you'd have to resort to 3rd party apps that allow non-synced copies.
