Hi, somewhat new to Android (last used it on 3.0!).

My Q: I am using Outlook as my email app, but the default email app is also receiving messages. How do can I have only ONE email app running? Thanks.

Outlook app or email account.
Gmail stock app, Samsung Email?
You can remove the Outlook app.
If the Gmail app and it's a Gmail address, you can stop it syncing. If it's another email account like Outlook or Live, you can remove it from the Gmail app.
