    One thing I never understood is why iPhone can send perfect 1080p videos form phone to phone but all my Android phones can not? I understand SMS/MMS is limited in size but even if I cut the video size down, the quality goes to unwatchable on the recipients phone. I have used whatsapp for a few to get around this, but majority of people I know don't use 3rd party apps. Is there any setting or way to send a 720p+ video via text?

    Because iPhone uses a different service than SMS/MMS. They use iMessage,wich is akin to services like Hangouts, Facebook's Messenger, Whatsapp, etc. (which also support higher-def video) SMS/MMS is a much more limited service, and furthermore, it's up to each carrier to set limits. You should check your SMS app to see if it's not just cutting off the file size but also compressing video to make it 'fit' to SMS/MMS limitations.
