Newbie question about app updates and factory reset

Anyone know how updates and app downloads actually work in terms of the version of the app that is downloaded? I recently did a factory reset on my Galaxy S5 (no marshmallow yet) and after my apps were installed I was buried under new updates. For some reason I was thinking that the latest version of the app would be installed after the reset so no update would be required. So much for a "clean" install. Now all of those update crumbs are rattling around in my phone.

After a factory reset, your preinstalled apps get reverted to the factory version. They will still need updating. When you say, "after my apps were installed," do you mean you restored them from somewhere?
