Privacy, Locking Down, Local Only Android OS, controlling what goes in and out

Hi All,

First, I am new to Android. I was a die hard Windows user until Win10 came out with all the lovely privacy invasion and a purple leather couch ad following me around everywhere I went.

I am a little disappointed off having to pay for phone service, having no privacy, advertising shoved down my throat, and anyone who's says their johnny law has access to my phone.

I could use some help with info on how to lock down and lock out everything and everyone. I dont want to use any free apps that will do what I want if I have to deal with advertising.... I would rather pay thousands of dollars for one app then having to deal with one more ad. I dont wish to have any cloud backup or anything do to with the Cloud.... OR should I call it "THE CLOD"

I'm savvy in IT as a Web Dev/Developer, so not totally clueless. Im with Tmobile, so far I have enabled encryption, and didnt sign up for or in to any google account when first setting up the phone.... But I cant tell who or what apps has access to what?

Any help would be appreciated.
