No menu item for backups in Google Drive

I'm using the Google Backup & Sync on my Samsung Galaxy A70 but when I go to google Drive, there's no "Backups" icon listed on the left panel ...
Where the heck are my backups ?

What about on the full desktop web interface for Google Drive?

Remember that the data in the backup files isn't easily accessible by you. It's only for use when you set up a new phone (or do a factory reset) and get prompted to restore from a previous backup.

The little cloud symbol with "Backups" doesn't appear on the web interface either ...

Try long press the Google drive app clear cache, data, force stop and see if it comes back

In your phone's system settings, go to Settings>Backup. Make sure the Backup toggle is on, and that the account is correct (and that you're using that account to check your Google Drive).
