I keep getting bug reports pop up on my nexus 7 and it asks if I want to share them.... Why do these come up, what does it mean and who would I share with?!

Your device is asking you if you want to send Google a report that your device has acted up.

What address would I send it to? Whenever I press share via gmail it just puts my address into the recipient box?!

There was a bug logged and its asking to report it. Sounds like it could be a Google bug report, but it's a bit odd that it would be occurring frequently. Does the pop-up occur most often after you do a particular action?
