How to sort out mess of quick dials and starred contacts?

So maybe you smart Googler Nexus 5 owners can help me figure this out. The new phone dialer appears to mash recently dialed contacts, 3 quick dials, starred contacts, and a link to all contacts on a single screen. Is there anyway to:
1) Turn off the recently dialed list, so that my starred contacts don't drop down off the screen?
2) Turn off the 3 quick dials, so that I can choose to look at my first 3 starred contacts instead of immediately calling them? (What an annoyance!)
3) Find out where this is documented? If anywhere?

I accidentally figured out that if I click the tiny * on the the corner of the quick dial contact icon, it brings up the usual menu, but that's a lot harder than clicking anywhere on the icon. I think I'm just going to be disappointed by the redesigned dialer UI.
