I'm wondering if a 16GB Nexus 5 is enough storage for someone who wants to use the following apps (of which there are 32). I will not be loading music or movies on my device, but I will likely have a few games, such as Monument Valley, and I may get an Android Wear Watch sometime next year.

Do you think I will have enough space on the 16GB model?
Please no "JUST BUY THE UNLOCKED 32GB".
I am on a carrier that only offers the 16GB version and I really love the design of Android 5.0

Welcome to Android Central! It'll probably be fine. The 16 GB version has about 12 GB available to the user, which should be fine, assuming you don't want to install a bunch of 1 GB+ games. It's clearly not as future-proof as a 32 GB phone, but for what you're talking about, I don't think you'll be hurting for memory.
