Disabling email

I seem to have killed my email. There should be a setting to turn it on and off. Am I missing something? I don't want it checking because I get multiple copies that way on different devices, but it would be nice to be able to without having to force close it when I'm done.

You can enable/disable syncing on each account. It's in settings under accounts. With sync turned off, you just open the email account and tap the "refresh" icon.
