Just like new iPhone XS Pixel 3 devices also support e-SIM? So, I want to know what is it and how does it works. And it's pros and cons compared to the normal sim cards

Basically the functionality of the sim card is built into the device. It can register your device to your carrier account without requiring a physical SIM card.

This. Pros: No buying a sim. Cons: None.

Only works with Project Fi though on the Pixel, right?

Cons; Might be that you would have to give a small call with service provider, when ever you change your phone.

You mean some people actually paid for a SIM? Most carriers give them out free.

As far as I know, the eSim only works with Project Fi, the major US carriers haven't embraced the technology yet. So your mileage may vary on the eSim

eSim will be supported by At&t, T-Mobile, and Verizon very soon. Apple has it in their XS line, and supposed to be activated with their 12.1 software, which should be this month sometime.

Biggest Con IMO is the possible issue of phone switching. I'm not sure how that would work and I recall it was a bit of a pita back in the day using Verizon which did not have sims then. Swapping out a physical sim card is so easy.
If it's as simple as pulling up "My Verizon" and doing it via the website then might not be to bad.
Alot of people including me switch out to different phones frequently and I hope the "E" sim is not going to make that a problem.
Project Fi uses an app from the app store to facilitate the E sim. Maybe it will be similar and easy to swap out phones.

To answer your question, it's a Subscriber Identification chip which is soldered in, as opposed to being removable. That's the difference. The first one I had to use was in a gear s2 LTE. The problem is when I switched to tmobile, the LTE function was lost. You are giving up portability, afaik.

Well these phones still have an physical SIM slot so you don't have to use the eSim if you don't want to. I have a physical sim card activated for my Pixel 2 XL because for a while I was still using an Essential phone on occasion. When I was using the PH-1 I would only be able to use the T-Mobile side of Fi, but still it worked pretty well around town.
