I have unlocked my bootloader using dePixel8. Can now flash one of Google's factory images and will that put me on par with Pixels bought from the Google Store?

Done...but I went back and locked the device for now... as there are more things that are being affected by the bootloader then I anticipated, i will have to rethink this before the security updates.

Other than Android Pay, what else is affected by the bootloader being locked?

If you use a custom kernel (or a patched stock kernel) with SafteyNet patches, it will remove the check for bootloader and allow you to use Android pay, banking websites, etc.
