So I am trying to decide between these 2 units. I really like the simplicity and coverage the Google WiFi offers but am alittle concerned with speed.
I currently have roughly 25 devices connected via WiFi. My primary concern is I have 2 4K streaming devices along with multiple 1080p along with an XB1X. With my current Netgear Nighthawk my XB1X download speeds are terrible and I get buffering on 4K video even with a 1gig internet connection.
So my question is will Google WiFi be able to handle 2 4k streams and a large download without studering or will I need the larger bandwith of the orbi?

It can handle that no problem assuming that the connection from the wall is sound. Are all those streams intended to be going on simultaneously, or is that a hypothetical? My current setup with 3 G WiFi points is 3 TV's with Chromecast Ultras, 1 TV with NVIDIA Shield, some Nest stuff, bunch of phones and tablets, several Google Homes and my laptop - no issues on any of it. I also have "1gig" connection, but my normal download speeds are 200-700.

Maybe not all at once but I would like to know the wifi can handle multiple devices and take advantage of upgraded internet.
I guess my real concern is without the dedicated 3rd band for relaying back to the base unit that the orbi has I wasn't sure if the Google WiFi could handle multiple devices loads.

Yep I've had no issues. Your use case wouldn't take huge advantage of the dedicated backhaul. That's something that would be much more needed for very heavy gaming on multiple devices (in which case WiFi might not be your friend), or frequent server exchanges.

Only game on 1 system at a time. And maybe 2 streams going for kid and wife. sounds like I'll be safe with the Google WiFi and be able to enjoy simple just works wifi.
