Is there a difference between uninstalling an app and disabling an app? If so, how do you disable an app?

To disable an app you have to be rooted and use an app such as Titanium Backup.

There is a Disable option under "Apps" in "Settings" for non-rooted users. I disabled Talk and other stuff.

Maybe it isn't a true "disable" like with root, though?

That is not true. In ICS (Android 4.X), for the first time, unrooted phone users are allowed to disable apps.

Is there a difference between uninstalling an app and disabling an app?
Yes. You can't uninstall apps that are installed on the system partition. These are apps that are part of what Sprint/HTC put on the phone. But by "disabling" them, they will no longer appear on the regular applications list and can no longer be run at all by the user OR by other apps OR by the OS. Although still installed, they are also ignored by the package management system and will not be updated by Google Play. It is as close as possible to actually having an app uninstalled. Disabled apps can then only be seen at the bottom of the apps list when in settings->apps->all or by performing a search while in "all" and they are labeled as "disabled".

The catch is that you have to be careful. You can not only disable end-user applications, but also services and parts of the OS, itself. Disable the wrong thing, and you can leave your phone in an unstable state.

The other catch is that Sprint removed the ability to disable the Sprint Zone app (which I think is a scummy move).

Where is the option for disable? I'm not seeing it in Settings>Apps. Clicking on the app brings up options (clear data, uninstall....) but no disable.

Disable should be there, but only for the pre loaded apps. Not for anything downloaded from the store.

Correct. There is no need to disable something user-installed, since it can just be uninstalled.

You can disable those apps you mentioned by first uninstalling the updates. After the updates are uninstalled the option to disable in in that buttons place.
