Evo ROM that removes mobile network? (Evo 4G)

In about a week, I will be getting a new mobile phone, which will take my current phone, an HTC Evo 4G (Sprint), off the mobile network. I plan to repurpose the Evo as a mobile hand held entertainment device for my children. I would like to find a ROM for this device that drops the phone part of the system, freeing up the RAM, CPU, and such, that is normally used by the mobile networks, and ensuring that there will be no mishaps with my kids accidentally calling 911 or doing something else that might be possible with an unregistered mobile phone.

Does anyone know of such a hack? It seems obvious to me, but I've not had the time to take up hacking Android.
