Unless there's been a major change that I don't know about, the stock Sense camera app will not run on CM7 or AOSP in general.

That's a shame because the first time I realized tap-to-focus/set exposure didn't work, I got very sad. I'm a photographer who believes the best camera is the one you have with you, but the CM7 camera app just doesn't cut it despite having much more accessible controls.

I also find myself missing the Sense Gallery because it could hit Flickr and Facebook photos as opposed to the stock Android Gallery which shows you every stupid piece of album art for your MP3s. Oh well.

You could try pulling the new sense camera app out of the new 2.3 GB sense leaked rom and install that. Worth a shot at least
