I own a 2014 Chevy Equinox that is not equipped with bluetooth

I also own an HTC ONE M8

How do I connect my phone so I can listen to music through my car speakers?

I bought an adapter that allows me to do so if I put the adapter and the radio on the same station. Doing so lowers the volume on music and podcasts so low, you can't hear it when u drive with the windows open.

Per HTC, I could connect a USB (from the car) to the phone using a USB cable with a 3.5mm phone connection. I bought a new cabl3, I put the radio on AUX, connected the phone via the cable and hit play on Pandora. The song plays and I either hear through the phone speakers or don't hear anything at all.

BTW - the same happens when I try this with my wife's 2014 Nissan Murano.

Any idea how to fix this problem?

Buy a 3.5mm audio patch cable (3.5mm plugs on both ends). Plug one into the phone's earphone jack, the other into the car radio's Aux jack.

For your car, I'd look into a direct connection FM modulator. One that has a direct wire into the FM antenna, not one that broadcasts an FM signal over the air. Something like this:

A direct connection still uses an FM signal that you tune the radio to, but you don't suffer any signal loss. Some allow you to plug in via the AUX jack on your phone, and some allow their own Bluetooth connection.

The Bluetooth is likely more expensive, but would eliminate any chance of electrical noise from coming through like in a wired connection (which may or may not even happen, depending on the car). I tried one once with mixed results in getting the phone and another device to pair with it, so I'm not saying it'll be 100%.

For the other vehicle with an AUX plug, did you see the headphone icon appear when you plugged the cable in to the phone? If not, the phone isn't recognizing the cable. It's possible there's pocket lint or something inside the port.

HTC said to connect the phone, via 3.55mm connector, to the USP port

    I did, didnt work

I've never had much luck using a USB port, which is why I suggested a modulator. They add either an aux or Bluetooth option to your car, depending on which one you buy.
