It'll be hard to tell where the issue is if all you are doing is looking at the photos on your phone. How do they compare when viewed on another screen or print? That may help determine if the issue is with the phone's display or the photo. Even that is subject to errors, as other screens and printers may have poor calibration. If these are primarily viewed on social media, post one there and get feedback from your friends to see if any trends show up.
Otherwise, you could use the manual mode and experiment with the various controls, and see what happens. Shooting in auto mode doesn't mean the app will make every photo perfect. It will make the photo look the way some random programmer thinks it should look based on an algorithm that can't take into account what the user is trying to achieve.
