Only apps that I know of are
    Sprint ID
    Sprint zone

These can all come out without any major loss in my book (this is what is removed from DanteRom)

    com.google.android.marvin.kickback.apk
    com.google.android.marvin.soundback.apk
    com.google.android.marvin.talkback.apk
    Protips.apk
    SprintID-1.6.28-ANDR_PRD.apk
    SprintZone.apk

From there, you can actually remove a bunch more but you will lose some features. Most google apps can be deleted like; Talk, Gmail, YouTube, Maps, (figure if it can be downloaded from the market you can delete it). A better use of space would be to move updates to /system/app from /data/app and delete the original (beware some have libs that must also be extracted and placed in the /system/lib folder to work like voice search for example). This will earn you more space for user apps. If you usually download a third party launcher like Zeam or ADW or GoLauncher, you can delete Launcher2.apk and push the launcher to /system/app as well.

thanks guys, just wanted to at least confirm the obvious ones were ok to remove.

i corrupted the dialer on an old phone just by removing 1 of 3 mp3 players it came with, dont want to make that mistake again.

If you're on ZVJ rooted, I'd highly recommend installing DanteROM since it removes bloatware and ads cool functionality.

And if memory for apps is a big concern, I'd also recommend installing Link2SD (my preference) or Data2SD. Guide with pros & cons follows.

For the non-Sprint-specific stuff on this phone, you might want to take a look at this thread over on the Optimus V forums
(obviously being Virgin Mobile it includes some info on their apps, but the rest... well the V is nearly identical to the S, different button layout and provider)
