What are the core apps? Which apps can I safely stop and not hurt my phone

For Google Apps, the only required ones would be Google Play Services, Google Play Store. Things like GMail, Google+, Chrome, Google Hangouts... basically any app that is readily accessible via the Google Play Store can be removed safely (and then reinstalled as user apps)

'Core Apps' is another word for system applications. But a lot of OEMs and carriers stuff their junk that could easily be installed from the Play Store into the system area, making them difficult to remove unless you've rooted your phone.

A lot of times, there are comphrensive lists of 'safe to remove' apps for your phone.

That MAY help you out, but if you come upon an app that you aren't sure about, leave it. You have to be careful when removing system applications as if you remove something critical, you will need to reinstall the factory image... a procedure that is a lot more involved than doing a factory reset.
