My tablet is Galaxy Note 10 3G, Portuguese. In Portuguese the option is: Configurações > Idioma e inserção > Teclado Samsung > Manuscrito. In English the option: Settings > Language > Samsung keyboard > Handwriting. If the option don´t exists, look for any option of keyboard. Another solution...

Touch "icon Settings" next to Samsung keyboard to display the following options: Handwriting > Recognition time. This explain is page 198 of manual. I have same problem and I try this solution today. But my language is Portuguese and I don't Know is solution is same.
