So far in my brief experience with the Pixel 3 the best picture I've taken with it is nowhere near as good as the best picture I've taken with my S8+. When I have some time and inclination I'll try some side by side comparisons.

Yeah I'll pick up a Pixel Stand if they go on sale again. I missed it last time.

I mostly use it when I have time as it's slower than cable charging. I'm using an older Samsung charger that works fine but doesn't do fast charging. It doesn't fast charge my S8+ either. The cable charger on the Pixel 3 is really fast. I'll use that if I need to get charged quicker.

Yeah I'm in the same boat as you. I tried the stock launcher and just it just won't do any do the stuff the Nova will allow you to do. After a couple of hours I gave up and installed Nova. But that's what we all love about Android, right? That we can do this kind of stuff and really personalize...
