I you use an application like widgetsoid there is an option to disable 4g but to be honest I've never used it so I don't know how well it works, if at all.

You can pay for stuff by waving your phone. Not that many stores in the US support that yet, but I assume it's coming. This is very popular in Asia, I've heard.

The Infuse has it on Froyo, so I'd be willing to bet that it's also there in the S2. One caveat - on my Infuse's stock ROM it had a warning that using the Mobile AP required a tethering plan, so I'm also willing to bet that the S2 will have some way to track usage so AT&T can automatically add...

The screen is said to be noticeably sharper than the Infuse - I'm sure this is a combination of the size "reduction" and the Super AMOLED Plus.

Handcent SMS + emoji plug-in?

If you're talking about using them in SMS, you can just use handcent SMS, and if you want you can get the emoji plugin. I'm not really a smiley user though, so you may or may not like them.
