Factory reset seemed to work a treat, all Chinese characters disappeared, thanks for all the help!

Confirmed, even via Safe Mode the main clock display on the home screen has now gone back to chinese for the day and month.

Yes, brand new. No, not using a VPN. I was using Developer Mode but have turned that off now as well, just in case. I'm in safe mode, the weather app still displays chinese....the main clock display is still UK (but these usually works OK for a bit and then changes). Thanks for the help so far!

It's an Android One phone by the way, not sure if that makes any difference...How do i post images now i've registered ?

Just registered.... Bought the phone via giffgaff.....going to try and use Safe Mode now..
