Root was a piece of cake. I didn't delete the apps, instead I just froze them with no effects. I should go back and actually delete them.

Take a look at APN On/Off in the market and see if it does what you are wanting. I control all my radios and they are off until I want them on. This app comes with a widget that flips data on and off in a second. Oh, and it's free. :) APN ON/OFF
