Did you actually delete it or did you disable it. Its pretty simple if it's only disabled but if you deleted it then your phone must be rooted

Most likely you can delete it from your phone by going to settings > personal > accounts & sync and choose Microsoft exchange then delete it off device. Not entirely sure on the details of when you reach it but it should be simple once you get to Microsoft exchange

Have you tried turning off auto sync? Also check in auto sync and see if anything looks funny and just in case stop everything there. Last resort is setting it to factory settings.
