It's not enough to "pair" the phone to the car's bluetooth system. The car also needs to be set up to be "hands-free" (terminology used by my Subaru). Once I read the Subaru's guide on the "hands-free" system and followed the instructions, my Galaxy S5 auto connected the next time I used the car.
