Have you tried these ROMs, I'm guessing you have but just in case here are a couple. I have tried both and like them a lot. They are not 2.1 they are 2.0.1. I see you were using a 2.1 ROM that might be your problem idk. Each processor is different and will top out differently than others...

mine does what the OP wants. I just tap the search key and start typing letters of their name or I can also use their initials as well. I.E. if I want John Doe I start typing the letters "jo" or I can type "j" space "d".

I can type the first letter of a contact right from the home screen, just hit the magnifying glass on the phone and start typing your contact's name. That is how I always make calls to someone in my phonebook.

My school uses an Outlook Web Access (OWA) exchange account and it was pretty easy to set up, just enter the correct info for your account on the phone as chuckbower stated. For OWA your account info you need to click options then click about.
