i discovered Theme Chooser and downloaded NTSense. the context menus become white which is what i'm looking for... although the settings menu is still white text on black background, it now looks exactly like the Sense UI settings menu with the colored icons. i'll settle with this theme for now.

the phone is probably connecting to the PC as storage. the apps that are getting "deleted" are the ones installed on the SD. when the phone is mounted as storage to a PC, the SD is not usable to the phone.
