When I try to reboot into recovery, it just reboots normally right back into CM7. I tried tapping "reboot into recovery" from Rom Manager and from the standard power down menu. What am I doing wrong?

Yeah, the problem is that I had to format my SDcard for something else, so I'd rather not re-burn and copy everything to it again if I dont have to. Any potential issues with using the Rom Manager method?

Possibly, but after unmounting the card, how would I push the zips over? Also I checked the card and there are 3 or 4 weird files on it (only 3MB total... but the image file is 7.55GB on my computer). Did I do something wrong? I'm trying to format the card and start over but the Nook says...
