I had this issue too. If you reformat the card and put both the CM7.zip and the gapps.zip in the boot partition it will install both of them at the same time. You may have to enable wifi after you boot the nook from the SD then set up your google accounts, but it works just fine. I've done it...

I've tried doing this with no success. Also running a Mac, and can't get the computer to recognize the Nook while running either Nookie Froyo or Honeycomb. Any thoughts?

*facepalm* It helps if the little switch on the SD card reader is switched so the permissions will allow it to write.....
