So it seems like there's no way of changing this back. I don't see the logic in this, when we can have a home screen full of the apps/widgets that we most frequently use! Anyway, thanks for all your help and time that you've all put into this.

Once again many thanks for all the help and suggestions. I am using the stock launcher with no icon packs installed, and the Android version is 11. The attached screenshot shows the Safe Mode home screen.
