To know if its worth worrying about holding onto unlimited data, you have to figure out how much data you actually use per month, what extra features you have on your account, and how much it would cost to get a current plan with those same features and enough data and compare them.

SIM (aka carrier) Unlock is not the same as BOOTLOADER Unlock. SIM Unlock (aka carrier unlock) will just allow you to put in a SIM from any carrier. It does not help you if you want to root, run custom roms, etc. Bootloader Unlock allows you to flash parts, pieces, roms, recoveries, etc...
