I already complained my watch counts steps while I'm playing piano. I could not find a setting to disable steps tracking on demand, so the only solution is to take it off. I can live with it as I do not play that often.

It seems Samsung confirmed issues with steps tracking (and heart rate sensor) in Galaxy Watch. Presumably SW update will fix the issue: Some Samsung Galaxy Watch units have faulty Pedometer (step counter) and Heart Rate sensors - PiunikaWeb
