I have the s22u and a fenix 6 sapphire and get the same thing, it gets deleted from connect daily. I tried it also on my iPhone 11 pro and it gets deleted from connect there also, so I'd say it's the watch or my connect app/account, not the phones. Odd that it happens in android and ios though...
